- Special powdered rock consisting of bentonite and gypsum: potassium – hydrogenotartrate de; Calcium (carbonate de). Alternatively, ashes preferably from vines are used for the clarification.
- Bring to near boiling at low heat.
- Add some powdered rock. Careful – high heat causes rapid frothing.
- Remove froth.
- Add more powdered rock if frothing continues
- When froth stops forming, cook for another 20 minutes.
- Let the must cool. Siphon carefully without disturbing the sediment. Clarified must is ready for vino cotto and must jelly.
- Observe sediment.
