Grape Must

Measure clarified must in cups. For each cup of must, use a heaped spoonful of flour. Heat up 2/3 of must and dissolve the flour

Cook clarified must on low heat, preferably outdoors Cooking takes many hours; final volume will be about 1/4 of original quantity Ready when drop holds

Special powdered rock consisting of bentonite and gypsum: potassium – hydrogenotartrate de; Calcium (carbonate de). Alternatively, ashes preferably from vines are used for the clarification.
